Expensive Necessities.

I recently had a life long dream manifest itself in my kitchen.

I am now the proud recipient of a new VitaMix machine.
This expensive little baby will last a lifetime and can go where no blender has gone before.  I wish I knew of the VitaMix back in my tiny apartment days out of school.  It would have saved a tremendous amount of counter space as it can replace a coffee and spice grinder, blender, food processor and if you add enough water; juicer.

The price tag of 500$ is indeed steep, yet I have replaced my $89 blender twice already in the last 12 months.  My once expensive food processor sits dormant as I hate to clean it and my juicer….well, my juicer makes my food processor look easy to clean!  If I add the cost of these up in my mind, I could have justified the price tag and purchased my VitaMix years ago.

If you have one, or even if you don’t, use your kitchen gadgets on hand and try a few of these yummy recipes below.
These are my new favorite Vitamix recipes.

Gazpacho
This version is chunky and fresh.  The basil really makes it pop and the avocado is a fresh surprise.
5 medium tomatoes
1 red pepper
1 cucumber
1/4 c onion1 avocado cubed
1 c water
3/4 tsp sea salt
1/2 c chopped cilantro
1/2 c chopped basil
1/2 c lemon juicePulse first 4 ingredients in VitaMix until chunky, place in bowl, stir in avocado.
Pulse cilantro, basil, water, lemon juice and salt.  Pour into bowl with other ingredients and combine.Serve chilled on a hot summer day.

Almond Flour Chocolate Chip Cookies.  Gluten Free!!
Use Raw Almonds and note that the yield between raw almonds and finished almond flour is 1:1.  2 1/2 c raw almonds will yield 2 1/2 c almond flour.2 1/2 c raw almonds
1/2 tsp sea salt
1/2 tsp baking soda
1/2 c olive oil
1/2 c agave nectar
3/4 c chocolate chips
1 Tablespoon vanillaPreheat oven to 350*   Line baking pan with parchment paper.Grind 2 1/2 c raw almonds in VitaMix until flour is formed.  The flour is “done” when it starts to create a hole in the middle and the flour begins to collect on the sides of the VitaMix.  Be careful, over process and you will have amazing almond butter but not very conducive to the recipe!

In a large bowl; combine flour, baking soda and salt.
Stir in Olive oil, agave nectar and vanilla.  Combine well.
Fold in chocolate chips and refrigerate 30 minutes.  (I’ve made these without refrigeration so if you’re short on time, skip it)

Spoon 1 TBS of dough 2 inches apart on pan.  Flatten slightly.
Bake 8-10 minutes watching your first batch closely.
Let cool for 20 minutes.  (this is the hard part)

Powdered Sugars

Granulated sugar yield to powdered sugar is 1:1.
For 1 cup powdered sugar, you will need 1 c granulated.

Put sugar in VitaMix on high until powdered.
Additions I love:
1 TBS organic dried lavender blossoms for lavender sugar.
1 TBS organic dried rose blossoms for rose sugar
1 vanilla bean for vanilla sugar

Add addition with sugar and process until powdered.

Pineapple Margarita with Chili powder/sea salt rimIn VitaMix puree 1/2 fresh pineapple and juice of 2 oranges.
Hand stir 1 tsp chili powder and 1 tsp fine sea salt in separate bowl.  Pour mixture onto flat plate.
Rim glasses with lime juice and dip rims into sea salt/chili mixture.Pour 1 oz (or 2) tequila in glasses, add ice and fill with pineapple orange mix.
