Craving crunchy, salty, greasy?
Instead of french fries, chips or other salty snacks, try Jicama Fries! Your kids will love them too.
Jicama is a traditional south american vegetable and is low in calories and high in water. According to The Nutrition Almanac by Gayla and John
Kirschmann, it is high beta-carotene, B complex, vitamin C, calcium, iron, and potassium.
Its sweet flavor comes from the fructo-oligosaccharide also known as inulin.
My favorite recipe follows:
One large Jicama peeled and cut into fry like shapes
olive oil
Sprinkle of Sea Salt (from now on, please only use Sea Salt. I’ll post on that another time)
nutritional yeast (high in B vitamins and available at health food stores!)
Chili Powder
Adjust the recipe based on how it looks. All of the “fries” should be oily and covered well in nutritional yeast and a sprinkling of Chili
powder. Adjust salt also based on taste.
If you’re not a spicy fan, use Paprika instead of chili powder.
Munch away…these do NOT keep long term, but they will stay crunchy for a few hours!
